Spanish Chicken

Pollo Guisado

Fry chicken in olive oil until brown on both sides, add chopped potatoes and 1/2 fresh chopped onion if you prefer, Sazon seasoning packet, 2 cups chicken stock with 2 teaspoons tomato paste, sofrito (blended garlic, onions, peppers red or both red and green, cilantro).  If you don't have sofrito, used fresh chopped ingredients (optional: use a combination of mild salsa with 2 cups of spaghetti sauce, Add small potatoes or cubbed potato, extra red bell pepper, 6 olives, bay leaf, teaspoon of capers and salt and pepper to taste. Simmer on medium heat stirring occasionally until pototoes are soft approximately 25 minutes. Note: To speed up cook time, cook potatoes in microwave and add to stew.


Chicken Marsala


Slice fresh chicken breast in half if too thick. In a plastic bag, use meat mallet to pound meat flat.  In another plastic bag with seal, add 2 tsp flour, garlic salt and pepper and lightly dust each piece.


Fry chicken in 2 tsp olive oil and tablespoon of butter, or butter spray, until brown on both sides and until cooked inside.


Set cooked chicken aside and brown sliced mushrooms in butter, then add 2/3 cup Marsala wine, 2/3 cup chicken broth, 2/3 cup heavy cream, one chopped shallot,  parsley and fresh thyme, salt and pepper to taste.  Cook until sauce is reduced and add cooked chicken simmer for 5 more minutes. 

Prepare pasta of your choice cooking in 2 tsp olive oil and salt.  Make sure water is boiling before putting in raw pasta and stir occasionally. 

When serving, top cooked pasta with chicken marsala and sauce, garnish with fresh parsley. Enjoy!



Meatloaf is a quick dish that goes well with most sides including mashed potatoes or grilled veggies.  


The basic is onion, garlic salt, pepper, Italian seasoning, and hamburger meat. I use the same ingredients for meatballs when making spaghetti and meat sauce for other Italian dishes. 


Optional ingredients are peppers, garlic, chopped parsley, basil, adding an egg or yolk to the meat mixture, breadcrumbs and parmesan cheese.  


Mix well and spread meat evenly into a loaf pan.  Pat flat on top. Bake at 35o degrees in the oven for approximately 45 minutes.  Remove and add tomato topping:  1 cup of of your favorite pasta sauce, and add 2 tsb. ketchup or tomato paste or 1 tsp brown sugar or monk sugar, and Worcestershire sauce for sweetness then bake another 15 minutes longer or until cooked inside, check with fork.   Sprinkle cheese such as parmesan cheese on top when serving.
