Shrimp Tacos

with Mango Salsa

Mango Salsa

​

1 chopped ripe mango

1/8 cup red onions 

1/8 cup tomatoes

cilantro

chopped jalapeno pepper (optional)

​

You can make your own or buy store ready made mango salsa.

​

Warm corn or flour tortilla on stove.

​

Shrimp

​

2 tablespoons butter

2 tablespoons olive oil

1 lb. large shrimp

1/4 onion

3-4 garlic cloves

garlic salt and pepper

Old Bay Seasoning

​

Fry clean de-veined shrimp in olive oil and butter with onions and garlic.  Season with salt and pepper, or garlic salt, and several sprinkles of Old Bay Seafood seasoning to taste. Cook until shrimp is pink on both sides. You can choose to chop shrimp or serve them whole on a warm flour or corn tortilla and top with mango salsa.

Salmon Fillet

Baked Salmon

1 fresh salmon filet

Garlic salt/pepper

Soy Sauce

Olive Oil

Ponzu Sauce

Rinse fish and place wet on aluminum foil.  The water adds moisture along with drizzle of olive oil along the top of the fish. Add garlic salt and pepper and drizzle with olive oil. Sprinkle with soy sauce and ponzu sauce. Broil on until cooked approx. 6-8 mins depending on thickness, checking to make sure the fish is not over cooked.

Ingredients

Brazilian Seafood Stew

1 lb. white fish (black cod, halibut, sea bass, or other white fish and/or shrimp

1 can light coconut milk

1 onion

1 red bell pepper 

1 cup carrot 

1/8 jalapeno pepper

3 or 4 garlic cloves

1 lime

olive oil

tomato paste

1/2 cup tomatoes 

1 cup chicken broth

1/4 cup cilantro

2 tsp paprika

1/2 tsp salt

This dish is surprisingly easy and quick to make in about 20 minutes.  

​

 

Rinse fish in water, and set on plate, squeeze one half lime juice and lime zest on fish and salt.  Fry chopped onion for 2-3 minutes in olive oil. Add chopped carrot, bell pepper, garlic and small amount of jalapeño pepper, just one slice for another 5 mins. Add tomato paste, 1/2 cup tomatoes (add more if you prefer), spices and broth and simmer for 5 minutes. Add coconut milk, and more lime and salt if needed, then add fish cut in large thick cubes to hot broth and add fresh cilantro. Cook until done, for approximately another 5-6 minutes. You can make this dish with shrimp and other seafood. Serve over rice and sprinkle fresh cilantro on top.
